Thai Coconut Shrimp
Ingredients
- 1 Box Plentiful Pantry Thai Coconut Soup mix
- 6 cups water
- 1 lb. raw shrimp peeled and deveined
- 1 ½ cups instant rice
- chopped fresh cilantro, optional
- lime wedges, optional
Instructions
- In a large pot whisk 6 cups water with all 3 packets in the Thai Coconut soup mix.
- Bring to boil, then reduce heat to simmer and cook 20 minutes.
- Add the shrimp and instant rice. Cook 5-7 minutes until rice and shrimp are cooked through.
- Move to bowls and garnish with cilantro and lime.
